Fiesta Beans
- 1 14oz package Uncle Ben's Instant Brown Rice
- 1 8oz can Hunt's Roasted Garlic Tomato Sauce
- 1 15oz can Bush's Seasoned Recipe Black Beans
- 1 15oz can Trappy's Red Kidney Beans with Chili Gravy
- 1 15oz can Delmonte Gold & White Corn
- 1 small can of Sliced Black Olives
- ½ cup Mrs. Renfro's "Smoky" Roasted Salsa
- 1 T dried minced onions
- 1½ tsp ground cumin
- 1 tsp dried oregano
- 1 tsp dried thyme leaves
- 1 tsp McCormick California Style Garlic Powder with Parsley
- ½ tsp cayenne pepper
- Konriko Jalepeño Seasoning
- Sargento Grated Mexican Style Cheese
Cook rice according to directions. Combine everything else in a large pot and simmer over medium heat until the rice is done. Add the cooked rice to the pot and season with Konriko to taste. Serve and sprinkle with cheese.
This makes a great side dish for grilled chicken! If you like, you can cook chicken and add it to the rice to make something like a mexican jambalaya.
